Creole Meuniere ~ This delectable cream sauce provides a heavenly contrast of flavor to a light flaky entrée.

½ lb of butter        

Lemon Juice of ½ a Lemon (1 Tbs)

1 cup Heavy Cream    

Reduction of Worstishire (1/4 cup)

1.  Melt butter

2.  Add lemon juice

3.  Reduce cream

4. Whisk together

Plate with a grilled fish either sided for generous dipping or drizzled over for a splendid presentation.

Apricot Jack Daniels Glaze ~  A wonderful glaze that provides a sweet element to a hearty dish.

1 Jar Apricots Preserves

1/3 Yellow Onion

1 tsp Creole Mustard

1 tsp Hoisin Sauce

2/3 oz Jack Daniels

1. Mix onion and preserves cook in pot over medium heat.

2. Heat until preserves simmer
